Ingredients for approximately 13 waffles
Carefully mix all the ingredients and let it rise for 30 minutes.
Turn the waffle iron to the highest temperature and start baking!
Recently I replaced the milk with goat milk and added a teaspoon of cinnamon to the batter! A big success! Another great alternative is to add a teaspoon of vanilla powder instead of cinnamon.
Adding an over-ripe banana to the batter gives it a sweeter taste and doesn’t change the firmness of the waffles.
Tip: these waffles aren’t very sweet by themselves. You can choose to increase the grams of coconut sugar or, like me, you can serve the waffles for your kids with dulce de leche.
I decorated my own waffles with whole Greek yoghurt, slices of banana and pear. Delicious!
