Gluten-free banana muffins with apple pieces

Ingredients for 12 muffins

  • 2 ripe bananas
  • ½ an apple cut in small pieces
  • 1 teaspoon vanilla essence or vanilla powder
  • 3 eggs
  • 140gr almond flour
  • 1 tablespoon of vegetable oil (not olive oil)
  • a pinch of salt
  • 1 teaspoon of baking powder (pick a gluten free one if you want have a gluten free version)
  • 1 tablespoon of honey
  • almond slivers for decoration


Pre-heat the oven to 180°.

Make a batter from all the ingredients –except the apple and almond slivers- by mixing them in a bowl. When the batter is smooth, mix in the apple pieces.

Fill the muffin cups and sprinkle some almond slivers over the top. Bake the muffins in the oven for 25 minutes and let them cool down.
